My favorite part of winter is warm salads. I think that warm salads are so underrated. They are everything a usual salad wants to be, but better because they're warm. If you don't think warm salads are underrated, then this Warm Shaved Brussel Sprout Salad is going to make you rethink your stance. This salad is warm and citrus-y and will make you feel good on a cold winter day.
TOTAL TIME: 25 minutes

INGREDIENTS:
12 oz. bag brussel sprouts
2 tablespoons extra virgin olive oil
2 teaspoons lemon juice
2 teaspoons balsamic vinegar
1/4 cup pomegranates
1/2 cup chopped walnuts
Parmesan cheese
Salt (to taste)
Pepper (to taste)
RECIPE:
Start by cutting the stems off your brussel sprouts and peeling the leaves off your brussel sprouts or shaving them using the largest shredder on a box grater.
Once you finish peeling your sprouts, place them in a large pot with your olive oil, lemon juice, salt, and pepper. Cook them on a low flame for 3-5 minutes, or until they slightly reduce down. Make sure to taste to make sure the sprouts are not super raw, but they also should not be super tender. Add more salt and pepper to taste if necessary.
Transfer the sprouts into a salad bowl and add in your balsamic vinegar, nuts, and pomegranates. Garnish with freshly grated Parmesan cheese before serving.
