This is a not-so-traditional Mexican Street Corn recipe. My mom makes this during summer parties, and it has become a fan favorite among our friends and family.
TOTAL TIME: 20 minutes
SERVINGS: 12
INGREDIENTS:
24 oz. bag frozen corn
½ red onion
½ green bell pepper
½ red/yellow bell pepper
1 medium jalapeño
¼ cup cilantro (add more/less to taste)
Juice of a lime
Chili lime seasoning (to taste)
½ teaspoon cumin (add more/less to taste)
About ½ teaspoon paprika/red chili powder (add more/less to taste)
Salt (to taste)
½ cup crumbled goat cheese
RECIPE:
Thaw frozen corn.
Chop onion, peppers, and jalapeño until they are the same size as the corn kernels. Chop cilantro.
Mix everything together along with all the spices. Mix goat cheese in and save some for a garnish.
