Roasted chickpeas are one of those delicious, healthy, Whole Foods snacks that you can finish in a sitting. Unfortunately, most store-bought chickpeas cost upwards of $4 for a small bag. Overtime this can get pricey, which I which is why I love roasting my own chickpeas. It's super simple and they come out so crispy and delicious. All you do is toss them in some olive oil, seasoning, and bake. The best part of this recipe is that you can experiment with whatever flavors you love and totally customize your chickpeas.
TOTAL TIME: 30 minutes
INGREDIENTS:
15 oz. can chickpeas (drained and rinsed)
1-2 tablespoons olive oil
1-2 teaspoons seasoning of choice
3/4 teaspoon salt
1 teaspoon lemon juice
RECIPE:
Preheat your oven to 400° F.
Line a baking pan with foil or parchment. Mix together the chickpeas, oil, seasoning, and lemon juice. Spread the mixture all over the pan. Try to make sure the chickpeas aren't touching each other.
Bake for 20-25 minutes or until the chickpeas are crispy. Midway through the bake time, rotate your pan and gently shake it so the chickpeas flip over. Let the chickpeas cool before serving.
