Pickled Onions


Pickled onions have recently been my favorite topping on basically everything. They’re tangy and a little pungent. They add so much flavor to anything you throw them on. From sandwiches, toasts, and salads, to bowls, stews, and basically anything, these pickled onions are the way to go. Did I mention they are also soooo easy to make. I'm not kidding, all you do is add some onions to a jar, fill it up with some vinegar, a spoonful of salt, a pinch of sugar, and stick it in your fridge. Then comes the hard part: waiting. SInce we are making pickled onions, they need time to pickle (duh). So, after adding everything to the jar, we need them to pickle in the fridge for about a week. The best part is that they get better with time. Each week they stay in your fridge, they keep pickling and getting more flavorful. These pickled onions will last up to two months in your fridge (if they last that long!).

INGREDIENTS:

1 large red onion

White vinegar or apple cider vinegar

2 teaspoons salt

1 teaspoon granulated sugar


METHOD:

  1. Thinly slice your onion into strips.

  2. Add the strips to a jar and fill it up with the vinegar until the onions are covered. Add the salt and sugar. Close the jar and shake it to make sure everything is well combined.

  3. Place in the fridge for 4-7 days until the onions begin to turn a vibrant pink. Then begin using and store in the fridge for up to 2 months.
