Pesto and truffle is a unique flavor combination which is often overlooked. These two flavors bring the best out of each other which is what makes this mouthwatering sandwich so flavorful. This is a comforting and hearty sandwich with a lot of flavor. Make sure to get your bread really crisp and serve it warm.
TOTAL TIME: 20 minutes
SERVINGS: 2 sandwiches
INGREDIENTS:
1 cup chopped mushrooms
About 3 tablespoons of truffle oil
Handful of arugula or spinach
2 tablespoons of pesto
4 oz. mozzarella cheese (3/4 cup)
1 small clove of garlic
Truffle salt (to taste)
Pepper (to taste)
4 slices of bread
Truffle zest, I like Sabatino Tartufi Truffle Zest Seasoning (optional to taste)
RECIPE:
Chop mushrooms into 1/2 inch cubes. Finely chop the clove of garlic. Spread pesto on one side of all the pieces of bread.
Heat a pan on medium-low heat and add in about 2 tablespoons of truffle oil.
Add in the garlic and let it cook for a minute or until it develops a little color. Then toss in the mushrooms and cook them until soft. Add truffle salt and pepper to taste. I usually add some of this truffle zest in as well.
Remove the mushrooms from the heat and put half of them on one slice of bread and the other half on another slice. Place the mushrooms on the pesto side.
Put some arugula or spinach leaves on top of the mushrooms and then top with half of the cheese. Make sure to put the toppings on the pesto side.
Pour about 1 tablespoon of truffle oil into your pan on low heat. Cook the both sandwiches with the cheese, leaves, and mushrooms on low. Cover the pan until the bottom of the sandwiches are golden brown. Then place the other slice of bread on top of each sandwich (pesto side down) and flip.
Cook until golden brown and serve warm.
