Mushrooms and caramelized onions go perfectly together hand in hand which is why this recipe is so amazing. This toast is perfect for lunch or even a snack. The flavors bring out the best in each other creating a toast with tons of flavor and textures.
TOTAL TIME: 30 minutes
SERVINGS: 2 toasts
INGREDIENTS:
2 slices artisan bread
½ cup sliced mushrooms
½ red or white onion
2 tablespoons vegan or regular mayo
1-2 tablespoons truffle oil
1 tablespoon olive oil
Truffle zest, I like Sabatino Tartufi Truffle Zest Seasoning (to taste)
¼ teaspoon garlic powder
Salt (to taste)
Pepper (to taste)
Chives (for topping)
RECIPE:
Cut onion in half and then in slices. Heat a pan with about 1 tablespoon of olive oil on a low flame. Once the pan gets hot, add the onions, salt them, and keep stirring on low heat for about 2-3 minutes or until translucent. Add one tablespoon of water and let it cook off. Repeat this until the onions are golden brown and then remove them off the heat.
In the same pan, heat up some truffle oil and add in the mushrooms. Cook until the mushrooms on a medium flame until they soften and are completely cooked through. Add truffle zest to taste if you have it. Once the mushrooms are done cooking, remove them off the heat.
Mix together the mayo, a dash of truffle oil, some truffle zest, garlic powder, salt, and pepper for the aioli. Toast your bread very well. Spread the aioli, top with the onions, mushrooms, and chives.
