This French Onion Toast is inspired by French onion soup. It’s cheesy, warm, and delicious. The onions add a little sweetness which is perfectly balanced out by the cheese.
TOTAL TIME: 20 minutes
SERVINGS: 2 toasts
INGREDIENTS:
2 slices of sourdough bread
1 onion (cut in slices)
1 garlic clove
1/2 dried thyme
3/4 cup shredded cheese (any combination of guyere, swiss, mozzarella, pecorino, parmesan, or brie)
about 1 tablespoon olive oil or butter
Salt
Pepper
Chili flakes
Parsley
RECIPE:
In a medium saucepan, heat up about 1-2 teaspoons of olive oil or butter on a low flame. Then add in your onions and cook on low for about 12-15 minutes. Half way through, add a teaspoon of water and salt to taste. Stir occasionally. You will know they are done when they are golden and soft.
Remove the onions from the pan and add a little oil or butter and your slices of bread. Toast the bottom side well. Flip and rub a sliced garlic clove all over the toasted side.
With the toasted side up, sprinkle the cheese on both slices and cook on a low flame. Cover your pan to help the cheese melt well. Once the cheese has melted, place your caramelized onions on top and cover for a minute or two. Top with freshly ground black pepper, chili flakes, and topped parsley.
