Chocolate Peanut Butter Banana Bread Oatmeal

Get ready for this recipe: banana bread and oatmeal lovers. This recipe is perfect for people like us banana bread and oatmeal fanatics. I love oatmeal. I eat it almost every day for breakfast. It’s so filling and I love how there are endless combinations you can make. Hot, cold, sweet, savory. I love oats in every form. I’m also banana bread’s biggest fan. I will eat any banana bread that comes my way. This is why I love this recipe, it captures the best of both worlds along with some chocolate and peanut butter flavors. This recipe can be made freshly on the stove before eating, or as overnight cold oats.

TOTAL TIME: 15 minutes

INGREDIENTS:

½ cup rolled oats

1 banana (plus more for topping)

1 cup non-dairy milk or water

1 teaspoon cocoa powder

1 tablespoon peanut butter

Hemp hearts or chia seeds (optional for topping)

Cacao nibs (optional for topping)

Agave (optional for topping)


RECIPE:

  1. Mash combine oats with milk or water. Mash full banana into the oats and liquid. Mix in the cocoa powder and cook on low until oats are fully cooked.

  2. Top with banana slices, peanut butter, hemp hearts/chia seeds, cacao nibs, and agave.

NOTES:

If you want to make this recipe as overnight oats, combine equal parts liquid and oats instead of following the 2:1 liquid to oat ratio for cooking oats. Add the toppings and mix-ins and let it chill in the fridge overnight.
