Balsamic and berries are one of my favorite flavor combinations, especially during the summertime. The sweetness from the berries, along with the acidity of the balsamic gives you something out of this world. Since it’s summer, that means it is blueberry season, and to celebrate, I’m making this Blueberry Balsamic Toast. It’s simple, yet just the thing you want on a summer day. Since simplicity is key in this recipe, you want to use the freshest ingredients you can, so they really shine. Aside from that, this recipe comes together in a flash and is the best celebration of summer blueberries!
TOTAL TIME: 15 minutes
SERVINGS: 4
INGREDIENTS:
1 cup blueberries
2 tablespoons balsamic reduction
½ cup ricotta
Pinch of salt
Freshly ground black pepper
Fresh basil
1 tablespoon extra virgin olive oil
4 slices of artisan bread
METHOD:
Start by toasting your bread until it is crusty and crunchy.
While the bread toasts, mix together the blueberries, balsamic, salt, pepper, olive oil, and basil.
Spread the ricotta on the toast, top with the blueberry mixture, more basil, a drizzle of olive oil, and some more freshly ground black pepper.
