Shishito peppers are a Japanese mild green pepper. For the most part, they aren’t super spicy, but once in a while a hot pepper will come along. I like to keep them simple, so we just blister them and lightly season them.

INGREDIENTS:
12 oz. shishito peppers
2-3 tablespoons olive oil
Zest and juice of a lemon (to taste)
Ground ginger
Chili powder
Salt
Flakey sea salt
METHOD:
Heat up your pan with olive oil on a medium-high flame. Then drop in shishito peppers and don’t touch them for a minute or two. It is important to make sure that the peppers are completely dry or else the peppers won’t blister nicely.
Lightly salt your peppers at this stage and add ground ginger and the chili powder.
After a minute or two, mix the peppers and let them blister on all sides. This will take 5-7 minutes.
Season the peppers to taste. Then add some lemon juice and zest. Lastly garnish with some flakey sea salt before serving.
